I have a record that is under the "Lead" and "Opportunity" status. They have been qualified and their order is currently in traffic. Their status should have changed to "Customer" but it won't. Because of this, I'm not able to create new opportunities for the record that have already been bought.

At some point in your process you need to create an account for your opportunity. This may even happen when you qualify the lead, but doesn't need to, it's a bit up to you.

If your current process manages to exist without requiring the creation of an account, I would change that. So ensure an account is a required field in some step of your process, then the user needs to create an account, the opportunity belongs to that account and you can easily add new opportunities/quotes etc to the account.

When that happens it up to you, you may want this to happen earlier or later, but I'd say once an opportunity was won would be the latest point, since you've presumably just sold something to someone and they are now an account (in a B2B setting).
